Soft, fluffy white rice served with a rich, slow-simmered beef stew made using Mama O’s Jollof Paste for deep, bold flavour.

Ingredients:

For the Rice:
2 cups (400g) long grain rice
3–4 cups water
Salt to taste

For the Beef Stew:
500g beef (cut into bite-sized pieces)
1 jar Mama O’s Jollof Paste
2 tablespoons vegetable oil
1–2 cups (240–480ml) beef stock or water
1 stock cube (optional)
1 small onion, sliced (optional)
Salt and black pepper to taste

Instructions

PART 1: COOK THE RICE

Step 1: Wash the rice thoroughly

Place the rice in a bowl and rinse it under cold water several times until the water runs clear. This removes excess starch and helps the rice cook into separate, fluffy grains.

Step 2: Boil the rice until tender

Transfer the washed rice into a pot and add water along with a pinch of salt. Place the pot on high heat and bring it to a boil.

Once boiling, reduce the heat slightly and cook until the rice is soft but not mushy.

Step 3: Drain and steam dry

Drain any excess water using a sieve. Return the rice to the pot, cover with a lid, and allow it to steam on very low heat for 5 minutes. This step firms up the grains and improves texture.

Set aside and keep warm.

PART 2: MAKE THE BEEF STEW

Step 4: Cook the beef until tender

Place the beef into a pot and season with salt and black pepper. Add a small amount of water, then cook over medium heat for 20–25 minutes until the beef becomes tender.

Reserve the cooking liquid (stock), as this will be used to build the stew.

Step 5: Brown the beef for added flavour

Heat vegetable oil in a separate pot over medium-high heat. Add the cooked beef and fry for 3–5 minutes until lightly browned on the outside. This step enhances both flavour and texture.

Step 6: Fry the jollof paste properly

Reduce the heat to medium and add the Mama O’s Jollof Paste along with the sliced onions (if using).

Stir continuously and allow the paste to fry for 3–5 minutes until it thickens slightly and becomes deeper in colour. This step is essential for building a rich stew base.

Step 7: Build the stew sauce

Pour in 1–2 cups of the reserved beef stock and add the stock cube if using. Stir thoroughly so the sauce is smooth and well combined with the beef.

Bring the mixture to a gentle boil.

Step 8: Simmer and develop flavour

Reduce the heat to low, cover the pot, and allow the stew to simmer for 10–15 minutes. Stir occasionally to prevent sticking.

During this stage, the flavours will deepen and the sauce will begin to thicken.

Step 9: Reduce to your desired thickness

Remove the lid and increase the heat slightly to medium. Allow the stew to cook uncovered for 5–10 minutes until it thickens to your preferred consistency.

The stew should coat the beef well and have a rich, glossy appearance.

Step 10: Taste and serve

Taste the stew and adjust the seasoning if needed. Serve hot over the prepared white rice.

Chef's Tips

  • Cooking the beef first and then frying it gives better texture than boiling alone
  • Always fry the paste before adding liquid to avoid a raw tomato taste
  • Use the beef stock instead of plain water for a deeper, more savoury flavour
  • Do not rush the reduction stage — this is where the stew becomes rich and glossy
  • Add sliced peppers or chillies if you want more heat and complexity
