A rich, smoky West African classic made effortless. Deep tomato flavour, perfectly cooked rice, and bold seasoning - all in one pot.

Ingredients:

Mama O’s Jollof Paste – 1 Jar
Rice (Golden Sella Basmati or Long Grain) – 2 Cups / 400g
Cooking Oil – 2 Tbsp
Water – 2.5 Cups / 600ml
Salt – To taste
Stock Cube – 1 (Optional)

Instructions

Step 1: Build the Flavour Base
– Place a large, wide pot on medium-high heat and add the cooking oil.

– Once the oil is hot, pour in the entire jar of Mama O’s Jollof Paste. Stir continuously and allow it to fry for 2–3 minutes until the paste darkens slightly and releases a rich aroma.

Do not skip this step, as frying the paste develops the base flavour.

Step 2: Add Rice & Combine
– Add the washed and drained rice directly into the pot.

– Stir thoroughly so that every grain of rice is fully coated in the fried paste.

This ensures even flavour distribution throughout the dish.

Step 3: Add Water & Seasoning
– Pour in the water, then add salt and the stock cube if using.

– Stir everything together once more, making sure the rice is evenly spread across the pot and submerged in the liquid.

Step 4: Steam Cook
– Reduce the heat to medium. Cover the pot tightly with foil then place the lid on top to trap steam inside.

– Allow the rice to cook for 20–25 minutes. Stir occasionally to prevent sticking, then cover again immediately.

Step 5: Check, Fluff, & Rest
– Once the liquid has fully absorbed and the rice is tender, turn off the heat.

– Use a fork to gently fluff the rice from the bottom to the top. Cover the pot again and allow it to rest for 5 minutes before serving.

Mama O's Tips

- Always wash the rice until the water runs clear to avoid sticky results

- Keeping the pot sealed is what creates soft, fluffy rice

- Slight browning at the bottom adds authentic smoky flavour

- This recipe goes very well with grilled chicken, fried plantains, or sautéed vegetables.
